Chufa is a grass-like, upright shrub that reaches a height of 50 cm (20 in). It features lance-shaped leaves, cylindrical brown tubers, and rays of tiny spikes that resemble greenish-brown flowers.
Chufa nuts have been a staple meal in the Nile Valley from ancient times, as discovered by artifacts during the excavation of the first villages. In his first-century CE writings, the Greek physician Dioscorides describes their capacity to soothe the stomach.
Chufa is a Mediterranean native that the Arabs brought to Spain and North Africa. Today, it thrives all over the world, including India. In winter and summer, the tubers—also referred to as "nuts"—are dug up.
