Buckwheat

fagopyrum esculentum

Buckwheat grows to a height of approximately 50 cm (20 in). It has clusters of five-petaled white or pink blooms and arrow-shaped leaves.

The French term for buckwheat, "blé sarrasin," suggests that it originated in the Middle East. The grain was either brought to Spain by the Arabs some centuries earlier, or it was transported to Europe during the Crusades (the eleventh and twelfth centuries).

Originating in central and northern Asia, buckwheat is widely grown in temperate climates, particularly in the United States. It is harvested in the summertime.
